St. Patty's Day

Ellie started going to daycare a few days before Valentines Day. When I picked her up that day, she had a couple of valentines. It didn't even cross my mind that I would need to get her valentines to hand out to her friends. I felt like a terrible mother, sending her child with out valentines--who does that. My solution, effective immediately we are celebrating the next holiday, and every one after that! St. Patrick's day it is. I found cute little "Rainbows" that I could send with Ellie to day care (Justin has the pic on his phone I will add it later). I decided we must have a Irish feast! I invited my sibs, and Justin's parents.

It was a long day of cooking, but Miss Ellie was a superstar and kept herself entertained. I snuck a couple of pics.


We started off our feast with some Irish Stew and Irish Soda bread. When it came to making the bread, I had to find a vegan recipe because it normally takes buttermilk. The first round was so beautiful but raw in the middle, the second one was not beautiful but tasted delicious.

The first course
When I think of Irish meals the first thing that comes to mind is corned beef and cabbage. I was not willing to put in the time to make that, so I opted for shepard pie.

Second Course
We often go to the vegan bakery down the street for sugar cookies, but this was a perfect opportunity to try a recipes for myself. I was nervous, it called for tofu. Who put tofu is cookies? Well I was pleasantly surprised, they were delicious and a huge hit.

March 11th

Today we are fortunate to have gorgeous weather, a little windy--but I'll take it.We started our morning off by hitting up the local vegan bakery (City Cakes), then walked over to the park. I think Ellie had fun, her face was so serious the whole time we were there.The only way we know she enjoys herself is she cries when we leave. A few weeks ago, Justin took Ellie to her 18 month check up. Her stats were: height 32 1/2, weight 23 lbs, her beautiful  head 49.5 cm (98 %). She is growing up way to fast. Justin is enjoying his new job more and more, and has started commuting to work a few times a week on the bike, which of course he loves. I have been really busy with work, we have a huge inspection coming up and their is so much to learn. I also want to do a 10k this summer, so time to start training for that. I am hoping to finish in around 48 minutes, well see. Oh,one last thing. Last week Ellie started saying "Oh man", we are going to count that as her first words :)
