St. Patty's Day

Ellie started going to daycare a few days before Valentines Day. When I picked her up that day, she had a couple of valentines. It didn't even cross my mind that I would need to get her valentines to hand out to her friends. I felt like a terrible mother, sending her child with out valentines--who does that. My solution, effective immediately we are celebrating the next holiday, and every one after that! St. Patrick's day it is. I found cute little "Rainbows" that I could send with Ellie to day care (Justin has the pic on his phone I will add it later). I decided we must have a Irish feast! I invited my sibs, and Justin's parents.

It was a long day of cooking, but Miss Ellie was a superstar and kept herself entertained. I snuck a couple of pics.


We started off our feast with some Irish Stew and Irish Soda bread. When it came to making the bread, I had to find a vegan recipe because it normally takes buttermilk. The first round was so beautiful but raw in the middle, the second one was not beautiful but tasted delicious.

The first course
When I think of Irish meals the first thing that comes to mind is corned beef and cabbage. I was not willing to put in the time to make that, so I opted for shepard pie.

Second Course
We often go to the vegan bakery down the street for sugar cookies, but this was a perfect opportunity to try a recipes for myself. I was nervous, it called for tofu. Who put tofu is cookies? Well I was pleasantly surprised, they were delicious and a huge hit.
